Cheese Stuffed Chicken Breasts

Introduction

Chicken Breast seasoned and cheese Chicken Breast seasoned and cheese
Number of Servings: 4

Ingredients

    4 skinless, boneless chicken breasts
    4 slices part-skim mozzarella cheese
    1 egg white, slightly beaten
    2 Tbsp flour
    1 Tbsp grated Parmesan cheese
    1 tsp snipped parsley
    1/4 tsp. paprika
    dash pepper
    nonstick spray coating

Directions

Rinse chicken: pat dry. Use a sharp knife to cut a small pocket in the thickest side of each chicken breast.
Insert a mozzarella slice in each pocket.
In a small mixing bowl beat egg white slightly.
In another bowl stir together flour, Parmesan cheese, parsley, paprika and pepper. Dip chicken in egg white. Then, coat with flour mixture. Spray a baking dish with nonstick coating. Arrange chicken in dish. Bake in a 375 degree oven for 20 to 25 minutes or till chicken is tender and no longer pink.

  • It was very good, but needed a little more flavor in the chicken. (not too sure exactly what to add, but it needs something). Make sure that you don't over-coat the chicken in the flour mixture- I would recommend dipping it in the flour mixture before stuffing it. - 2/11/10

  • I enjoyed this recipe, my husband not so much. The baking time for the chicken was a lot longer for me than the recipe stated. I added some tomato sauce for added flavor. I might make it again, but will probably tweak a few things next time. - 2/1/09

  • Had this for dinner the other night with someone else recipe for italian baked potatoes and it was very good. the parmesan crust is excellent. I added a little pasta sauce to the chicken for an extra shot of flavor. - 6/19/07
