Ingredients

1 cup lentils

1 onion, diced
1 bunch parsley, destemmed
1/2 cup sunflower seeds
2 pieces whole wheat bread (dry better)
1/2 cup wheat germ
3 tbs ground flax seed
1 tbs garlic
2 tsp cumin
2 tsp coriander
1 tsp cayenne
1 tbs lemon juice
1 tsp baking powder
Directions
Makes 48 pieces, 8 servings.
Cook lentils in 3 cups water until soft. Cool
Heat oven to 350 F.
Dry saute onion over medium high heat.
Coarsely chop parsley (make sure dry), sunflower seeds and bread in food processor. Add cooled lentils, onions, wheat germ, flax seed meal, baking powder and all seasonings and process until well mixed but don't turn into paste.
Line baking sheets with parchment paper (or spray with pam). Roll mixture into little balls @ 3/4 inch or less. You should wind up with about 48.
Bake for 15 or 20 minutes. Serve with a hot pepper relish or tahini/lemon sauce.
