I would use low sodium, fat free chicken broth in place of water
I too make something simular. We call it chicken over rice. I use the 2 cans of soup (98% fat free) , 2 cans milk (non-fat), 2 tablespoons mustard, and creole seasoning to taste. I serve the vegetables on the side.
