Whole-Grain Banana Muffins

1 C whole wheat flour 1/2 C whole oatmeal3 tsp baking powder, 1/2 tsp baking soda,1/4 tsp salt1 1/2 tsp cinnamon1/4 C brown sugar1 egg plus 1 egg white1/3 C unsweetened applesauce1 C mashed banana
Preheat oven to 400. Mix dry ingredients in a large mixing bowl. Mix applesauce, egg, egg white, and mashed banana together before adding to dry mixture. Stir just until well blended. Spoon into 12 muffin cups.
Bake for 12- 18 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.

DELICIOUS!!! Thank you! Made this on a whim. I had some bananas that needed used up. I read several banana muffins recipes, chose this simply because i had all the ingredients on hand. So glad I did!!!! Next time i would add some walnuts simply because i love them. But the recipe as is quick easy d - 2/24/15
