Ingredients

    2 lbs chicken breasts cut into 2 inch cubes
    1 cup red bell peppers cut into 1 1/2 - 2 inch squares
    1 cup green bell peppers the same as above
    1 cup onions cut the same as above
    1 tspn salt
    1 tspn black pepper
    1/2 cup white vinegar or cider vinegar
    1/2 cup olive oil
    1 tspn italian seasonings or dried parsley
    1 tspn chicken tenderizer or season salt

Directions

Cut chicken and vegetables and place together in large glass bowl. Pour in oilive oil, and seasonings mixture and mix well. Place in refrigerator for a min. 1/2 hour ( I like to leave it overnight if possible) the longer the better flavor. Skewer About 4 pieces of chicken per kabob with your choice of pepper, onion and tomato combination in between.

Place on grill and cook until chicken is fully cooked with crisp edges to the vegies. This can also be placed in your broiler, but pay close attention to it.

    We love this recipe! We usually add some mushrooms and use a grill basket rather than making individual kabobs (lots easier!). It's a great way to get your veggies and so easy, too! - 4/10/14

    Made this for a get together, and it was a hit! Marinated veggies overnight, and didn't use tomatoes, as not enough members of my dinner party liked them (no accounting for taste!). Used red & yellow peppers as well to add some color. Cut the salt, added garlic. Yum! - 6/30/08
