Introduction

A very low calorie breakfast meal. Can be made ahead and frozen until needed. Then microwave until hot. A very low calorie breakfast meal. Can be made ahead and frozen until needed. Then microwave until hot.

Ingredients

    Southern Style Hash Browns (2 lb. Bag)
    2 Tablespoons Olive Oil
    1 carton egg beaters (32 oz.)
    1 lb. turkey breakfast sausage
    1 1/4 cup shredded cheddar cheese (fat free)

Directions

Fry hash browns in the olive oil until tender. Make eggs in pan with spray oil on it to keep it from sticking. Cook turkey sausage until done. When finished preparing all the above ingredients then separate into 8 different 2 cup microwavable bowls or mix all together for 1 meal. I layer the potatoes first, then eggs,sausage, and last cheese. Put bowls in freezer and take out when needed. Cook in microwave until all ingredients all hot! Can season potatoes with season salt, salt & pepper for taste.

    Loved this dish. I made one change, instead of hash browns I used brown rice. I find that eating a whole grain with my first meal of the day keeps me full for longer and gives me a lot more energy. - 5/4/09

    I made these and put them in sandwich baggies for easier freezing. Throw one in the microwave, then pour into a bowl and I have a meal on the go. - 1/24/10

    I used regular eggs and added onions and bell peppers to this which upped the nutrition levels. I was very good. I love the Jimmy Dean D'Lights bowls so knew I'd love this too and it is much cheaper to make. - 8/17/09

    I used real eggs, added fresh steamed asparagus (I did not use potatoes), bell peppers, onions, mushrooms and garlic. I didn't have any but my grandkids loved it wrapped in flour tortillas. - 1/14/10

    Turkey Sausage
    1 lb ground turkey
    1 tsp salt
    2 tsp sage
    1 tsp fennel seed
    1 tsp thyme
    1 tsp black pepper
    1/2 tsp white pepper
    1/2 tsp cayenne
    1/4 tsp garlic powder
    1/8 tsp ground cloves
    1/8 tsp nutmeg
    1/8 tsp allspice
    Combine. Let sit in fridge overnight. Cook.

    I made a version of this recipe in a p. Added some precut veggies and used 2 eggs and 1 egg white. Nuked full power in microwave for about 3 minutes. This is so quick to throw together and cook. It's unbelievable. - 3/5/13

    I love the idea of this recipe, but the overall taste didn't jive with me. I think I would add onions and use real eggs. I have been eating it with pace picante on top to mask the taste a bit.
