Ingredients
2 tsp of Sunflower Oil
1.5 cups of diced Cooking Onions
2 boneless, skinless Chicken Breasts
6 boneless, skinless Chicken Thighs
1 medium size Turnip, diced
4 medium size Carrots, diced
3 medium size Potatoes, diced
2 tsp of ground Savory
1 tsp of iodized Sea Salt
1.5 tsp of ground Black Pepper
Acadian Dumplings:
1.75 cups of All Purpose White Flour
3 tbsp of Baking Powder (aluminum free)
0.5 tsp of Iodized Sea Salt
1 tbsp of Salted Butter
0.5 tsp of Non-Fat Milk
1 large beatten Egg
Directions
In a large stock pot, heat oil on medium heat and add diced onions. Cook until transparent.
Cut boneless skinless chicken pieces in small bite size pieces. Add to cooked onions and stir until fully cooked.
Add water to cooked chicken mixture, and bring to a boil. Add spices and turn down heat, and simmer for approx 45 minutes.
Add diced carrots and turnip, cook for 10 minutes. Add potatoes and cook for another 10 minutes.
Dumplings:
Mix all dry ingredients together. Break up butter with fingers in flour, until butter pieces are the size of peas.
Beat egg and mix with milk. Pour into flour mixture and stir until well mixed.
Bring Chicken Fricot to a boil, and with a large spoon, add dumpling mixture.
Cover and simmer for approx 10 minutes.
Makes 8 servings.
