Ingredients

    • 4, 7-inch whole wheat tortillas
    • 1/2 cup shredded light mozzarella cheese
    • 1/4 cup shredded light cheddar cheese
    • 2 slices smoked chicken or turkey, slivered
    • 2 green onions, thinly sliced
    • 1/2 cup finely chopped fresh cilantro
    • 1 tomato, finely chopped and drained
    • 2 teaspoons finely chopped pickled jalapeño peppers

Directions

1. Place tortillas, one at a time, on a preheated nonstick skillet.



2. Evenly distribute 1/4 of mozzarella and cheddar cheeses, chicken, onions, cilantro, tomatoes and peppers over top. Cook over medium heat until cheese melts (tortilla shouldn’t brown).



3. Fold to make half moon and press firmly in place. Transfer to baking sheet or platter in warm over. Repeat with remaining tortillas and remaining ingredients.



4. Cut each into two or three wedges, and serve immediately.



Makes 2 servings.

    very good recipe. i used ground turkey instead of shredded. browned onion and peppers with the meat line taco without sauce. used mexican cheese with light mozzarelo. a little less expensive for college students - 4/10/08

    This was sooo good! I felt guilty eating it! But it was perfect for my meal plan, AND my 7 year old and huband loved it as well! I replaced the tomato with salsa and used low fat sour cream! - 1/21/09

    I made this with a little of my left over cooked ground beef i had,from the night before with some drained kidney beans, flax and homemade taco mix ( so i dont get the preservatives and extra sodium) ohhh so good. Nice different to serve food. I could only eat half a wrap with my salad :) Stuffed! - 11/16/07

    If the sodium count is right, that's way too high for me. I make similar with low sodium taco seasoning, 2% Kraft Mexican blend shredded cheese and found a low carb tortilla shell at local Walmart. Also, I like a little nonfat plain yogurt. - 10/17/08

    I am allergic to cilantro so I either leave it out or substitute parsley when the green leafy look is desired. I love quesadillas and will definitely give this one a try. - 5/21/08

    I made Chicken Quesadillas last few days now (my own recipe-but pretty much the same as this one) coz my boyfriend can't get enough of it...
    To season them -we use the "Taco Seasoning" or "Fajita Seasoning"......you can also try Taco Bell Seasoning that they sell at grocery stores! Turns out great!
