Introduction
Great tasting, hearty Italian soup that I have modified for a vegitarian option. Great tasting, hearty Italian soup that I have modified for a vegitarian option.Number of Servings: 8
Ingredients

1 medium onion, chopped
1 large carrot, chopped
1 stalk of celery, chopped
2 large cloves of garlic minced
1/2 tsp dried oregano
1 medium potato
2 cups vegetable broth
2 cups diced tomatoes or large can
1 package Morning Star Itillian Sausage, sliced
1 can black beans drained and rinsed
Salt and pepper to taste
Pam cooking spray
Directions
1. Heat large pot with low fat cooking spray. Add onion, carrot, celery and salt and pepper; cook and stir over medium heat until vegetables begin to soften.
2. Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in sausage. Cover and simmer gently for at least 1/2 hour to blend flavors.
3. Add beans and let heat through, about 15 minuets.
4. Salt and pepper to taste.
