    1 Tbsp Olive Oil
    2.5 Large Onions, diced
    2 Small Carrots, peeled and diced
    1 Lb Lentils (2 cups) uncooked
    5 Cup Vegetable Broth, fat free
    2 Cup Water
    1 Clove Garlic
    Salt and Pepper to Taste


Sautee veggies in olive oil until softened. Add lentils, broth and water and bring to boil. Lower heat, cover and simmer for 30 minutes or until lentils are very soft. Add water if soup becomes too thick. Puree 1/3 of soup mixture. Mix all together. Makes 12 servings
