Ingredients

    1/2 lb mushrooms, fresh
    1/2 cup onion
    1 lb chicken pieces
    1 tsp chicken bouillon
    1 tsp poultry seasoning
    1/4 tsp salt
    2 cups water
    3/4 cup rice, uncooked

Directions

Slice mushrooms.
Remove skin from chicken.
Spray 12" skillet with nonstick spray coating.
Brown mushrooms, onion, and chicken pieces on all sides over medium heat about 15 minutes.
Stir in seasonings and transfer to the slow cooker (can be refrigerated overnight).
Start slow cooker on LOW.
When ingredients are heated, add rice.
Cook until done.

    I substitued Mrs. Dash and seasoned salt since I didn't have the poultry seasoning. It was awesome! I added a bell pepper and several carrots. I cooked for about 4 hours on high and it was perfect. I used boneless chicken breasts and have enough leftovers for at least 2 more meals. Family loved! - 1/6/08

    The directions didn't say exactly how long to cook it, but I checked it after 3 hours on a medium slow cooker temperature and the rice was perfect for us! Delicious! - 12/25/07

    I found it to be a little salty with the inclusion of wild rice, so will try brown rice next time. It was very flavorful - 11/28/07
