Ingredients

•2 Pounds cooked shrimp, peeled and deveined
•1 Large white or red onion finely chopped
•1/2 Cup fresh cilantro, chopped
•4 Tomatoes finely chopped
•32oz V8 Spicy Hot or Regular
•3 Limes: 2 fresh limes juiced, 1 Wedged for garnish
•1-4 Teaspoon Tapatio hot sauce to taste (add 1 tsp first and then gradually add more if you like for a zesty bite!)
•2 Ripe avocado peeled, pitted and chopped
Directions
Place shrimp in a large bowl; you want a large enough bowl to mix all the ingredients in, so there is easy handling.
Add the finely chopped onions, tomatoes, cilantro & avocado to the shrimp in large bowl and gently stir.
Pour in the V-8 Juice, the juice of 2 limes and 1-4 tsp of Tapatio and gently stir. Don't stir too roughly because you don't want to mash the avocado.
Cover the bowl with saran wrap or lid, and refrigerate 2 to 3 hours to chill.
Serve chilled in one large serving bowl or ladle into individual bowls and garnish with lime wedge
