Ingredients

    * *Margarine, soft, .5 cup
    * Brown Sugar, .5 cup, packed
    * Applesauce, unsweetened, .25 cup
    * Vanilla Extract, 1.5 tsp
    * Flour, whole grain, 1.5 cup
    * Baking Powder, 1 tsp
    * Salt, .25 tsp
    * Cinnamon, ground, 1 tsp

Directions

preheat oven to 350F
beat margarine and sugar in large bowl with electric mixer on medium speed until light and fluffy.
add applesauce and vanilla.
Mix flour, baking powder, cinnamon and salt. Add to wet mixture; beat until well blended.
Cover and refrigerate 1 hour.
roll out dough to 1/8-inch thickness on lightly floured surface.
Cut out with cookie cutters. place on greased baking sheet.
bake 10-12 min

makes 32 cookies or 32 servings

    Thought these cookies were terrible. Couldn't taste apple or cinnamon just whole wheat flour. Won't bother to make again and will probably throw them out. Even my husband who eats every cookie didn't like them.

    Very Good
    This was really not that bad! I would love a little more flavor, but overall it seems to please the kids and the adults. Since they turn out brown, they make a great gingerbread substitute for gingerbread items. Also, there are no peanuts or eggs, so my allergic son can eat these cookies. - 12/23/09

    Incredible!
    This is a wonderful recipe!! I tried it because I loved the calorie count! They are absolutely delicious! The dough is a bit sticky so definately use flour to roll out the dough with. I used two sheets of wax paper dusted with flour to roll the dough. I am adding this to my Christmas baking list - 10/31/07
