Ingredients

    2 tsp Canola Oil
    73 g chopped white onion
    96 g chopped yellow bell pepper
    117 g sliced white mushrooms
    198 g sliced baby zucchini
    200 g broccoli crowns
    175 g frozen corn kernels
    725 g extra lean ground beef
    2 tsp Mrs. Dash Salt-free Southwest Chipotle Seasoning

Directions

Heat oil in non-stick skillet; add onion, peppers and mushrooms and saute until soft. Add zucchini, broccoli and corn, cook until all vegetables are soft. Remove from skillet and set aside. Brown ground beef, add seasoning and add vegetables back in to skillet, cook 10 minutes longer to combine flavors.

Makes 8 1 cup servings.

Serve alone or with pasta, rice or potatoes.
