Ingredients

1 c. whole wheat flour
1/2 c. wheat germ (could sub white flour)
1/3 c. brown sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ginger
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
1/3 c. honey
1 egg
1/2 c. applesauce
2 cups grated zucchini
1 tsp vanilla
1/2 cup chopped pecans
Directions
Preheat oven to 350°.
In a large bowl, mix together dry ingredients, flour through cloves.
In a separate bowl, mix together wet ingredients, honey through vanilla.
Pour wet ingredients into dry and stir until just combined. Fold in pecans.
Pour into a greased loaf pan.
Bake for 40-45 minutes, or until middle of bread is firm to touch (not liquidy). Let cool completely before slicing into 12 slices.
Serving Size: Makes 12 pieces, 1 per serving

This bread has a rich chewy texture, and the combination of spices sets it apart from other zucchini breads. It is moist, not too sweet and easy to make. I have added this recipe to my cookbook and will absolutely make it again. It would probably be amazing used as french toast for breakfast...yumm. - 7/25/11
