Ingredients

    1 tsp light olive oil
    1/4 c chopped onion
    1/4 c bell pepper (red or yellow or orange
    1 large egg, beaten
    2 6-inch flour tortilla
    1/4 cup shredded cheddar cheese
    3 oz Canadian bacon cut into strips
    2 tbsp salsa

Directions

Saute onion and bell pepper in olive oil. Add egg and stir, cooking until done.

Preheat broiler; spray baking sheet with nonstick cooking spray. Place tortilla on the baking sheet; broil until blistered and softened, about 15 seconds per side.

Sprinkle 1/2 the cheese over tortilla; top with bacon and salsa. Add egg mixture. Top with other 1/2 of cheese. Top with tortilla and spray with olive oil flavored nonstick cooking spray. Place on baking sheet and broil until the cheese melts, about a minute on each side. Cut into wedges to serve.
