Introduction

Number of Servings: 12

Ingredients

    4 bananas
    1 cup 0% fat greek yogurt
    1 egg

    1 cup brown sugar
    1 cup ww flour
    1/2 cup white flour
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt

Directions

Mash bananas. Add the yogurt and beaten egg to banana and wisk together. Combine all the dry ingredients in a separate bowl, then pour the wet mixture into the dry mixture and stir just until moistened. Scoop batter into muffin cups with liners or with no-stick spray. Spray not included in calorie count. Bake in a 325 degree oven for 35 minutes. Makes 12 good sized muffins. Could probably make one loaf of banana bread, but haven't tried it yet.
