Introduction

These tasty muffins are low calorie, high fiber and low fat. I came up with this recipe about 3 or 4 years ago when I found myself with about 10 lbs of over-ripe bananas. This is the original version I came up with.The Craisins add a nice tartness to complement the sweetness of the loaf. These tasty muffins are low calorie, high fiber and low fat. Ingredients

    3 cups mashed bananas, approx 6 whole bananas
    1/3 cup honey,
    1 egg
    1 tsp vanilla

    2 cups All-Bran, ground (makes 1 cup),
    1 1/4 cup whole wheat flour
    1/4 cup wheat bran
    1 1/2 tsp baking soda
    1 tsp baking powder

    1/3 cup Craisins,
    1/3 cup chocolate chips

Tips

*try using applesauce, pumpkin or other pureed fruits and/or veggies in place of the bananas!
*remember that any substitutions in this or any recipe will change the nutrition stats!
*remember that muffins cook faster than in loaf form!


Directions

Preheat oven to 350F

In large bowl mix together wet ingredients.
In a separate bowl mix dry ingredients thoroughly then add to wet ingredients.
Mix with as few strokes as possible. Just before all flour mixture is wet, stir in craisins and chocolate chips.
Divide Evenly over 2 loaf pans (bake about 32-35mins) or 24 muffin tins. (bake about 15-20 minutes)
