Ingredients

    1 tbsp Coconut Oil
    2 Leeks
    4 cups Brussels sprouts, fresh
    2 tbsp Dill weed, fresh
    1/2 tsp salt
    dash pepper

Directions

Cut off leafy tops of leeks, cut into quarters lengthwise (cut almost all the way through), wash thoroughly. Sauté in oil briefly. Meanwhile, boil pot of water & blanch sprouts until they turn bright green (less than 5 min). Drain & add to pan & sauté along with leeks. Add salt, pepper & dill.

Serving Size: Make 4, 1 cup+ servings
