Ingredients

4 boneless, skinless chicken thighs or breasts
2 c reduced fat sour cream
about 3 c chicken broth
1 c mushrooms
1 onion
1 red (or yellow) bell pepper
3 cloves garlic
3 Tbsp paprika
cayenne, salt, pepper to taste
cooking spray (or olive oil)
optional: dumplings (or noodles)
for dumplings:
1 c flour
2 eggs (or equivalent egg product)
1/4 c nonfat milk
salt and pepper to taste
Directions
saute onions and garlic in a large pot in cooking spray. add the bell pepper and mushrooms, and briefly saute.
add the chicken, and add enough broth just to cover everything. add paprika, cayenne pepper, salt and pepper to taste, cover and simmer until chicken is cooked through, about 30-45 minutes.
pour sour cream into a bowl, and spoon small amount of broth from pot in to temper. stir, and add to stew, and take off heat to thicken.
to make dumplings, combine flour, eggs, and milk, and drop small spoonfuls into rapidly boiling water. let boil for 10-15 minutes, and add into stew for at least 10 minutes before serving to make extra hearty and delicious.
makes four servings, and is a fast, easy one pot dish!
