Introduction

Number of Servings: 12

Ingredients

    1 egg
    3/4 cup milk
    1/3 cup applesauce (I use unsweetened)
    1 1/2 cup whole wheat flour
    1/4 cup all purpose flour
    1/4 cup brown sugar
    2 1/2 tsp baking powder
    3/4 tsp salt
    *optional add ins: blueberries, chocolate chips, apple chunks, peanut butter chips

Directions

Line 12 muffin cups with paper baking cups or spray with nonstick cooking spray. Mix together egg and milk and applesauce. In a separate bowl, mix flours, sugar, baking powder, and salt. Add all at once to the liquid and mix just until moistened (it will be lumpy). Stir in add ins if desired. Spoon into prepared cups, filling about 2/3 full. Bake @ 400*F for 20-25 minutes. Remove from pans and enjoy! Makes 12 muffins.

    They were good but not sweet, at all. I had added blueberries & cinnamon & did a small glaze of powdered sugar/milk...just drizzled on top...(not much). They stuck to the paper cupcake liners. Will make again, maybe adding choc chips. - 1/29/13

    This is my favorite. I like them with banana. I make my applesauce with cinnamon which makes it taste better I think. - 4/11/11

    Very Good
    I tried this recipe and they were pretty good for being low fat. I added blueberries to mine and they turned out really good. I am happy with this recipe and will make them again. - 9/2/08

    These were good but not very sweet. I think would add a little more sugar or sweetened applesauce to also moisten them a bit. But they are filling! - 3/3/08
