Introduction

These are tasty blueberry vanilla protein muffins which offer a great options to the usual protein shakes. These are tasty blueberry vanilla protein muffins which offer a great options to the usual protein shakes.
Number of Servings: 12

Ingredients

    2 cage free large eggs
    9 scoops Whey Vanilla protein powder
    145 grams blueberries
    1 tsp baking soda
    water

Tips

1) Be sure to refridgerate these once they cool. The protein powder is a derivative of milk so they will spoil, rather quickly, once the powder is reactivated with water.
2) You can substitute blackberries or strawberries for the blueberries.


Directions

Pre-heat over to 375 degrees. Mix all ingredients with enough water to make a muffin batter consistency. Then using an icecream scoop, place one scoop of batter into each space on the muffin tin. Bake at 375 for approximately 15 minutes or until golden brown on top.

Serving Size: Makes 12 muffins & 1 muffin = 1 serving

    When these were baked, they were very shiny and glossy -- very pretty, They were also very dry, Ironically, the dryness has not kept my husband from liking these! Were my results normal? - 8/27/19
