Ingredients

    lightly oil a Pyrex dish (or other deep cooking tray, doesn't need to be round).
    Slice the apples into thin strips and place them in the dish.
    In a bowl, mix 0.5 cups of olive oil (I use extra virgin olive oil), 0.5 cups of brown sugar, 2 eggs, 2 tsp. rum, 2 cups flour (preferably self rising flour, if you use regular flour add 2 tbs. baking soda), 0.25 cups milk and 2 tsp lemon juice.

    When the dough is fully mixed, pour it on the apples until they are all covered.

    Take a bit of aluminum foil and wrap it around your finger to create a little tube - it should be higher than the dish. Place the tube in the middle of the cake to let steam out while baking, and bake for approximately 30 minutes at 180 degrees celsius, or until brown.
