    10 boneless, skinless chicken thighs
    1 cup chicken broth
    1 small onion, chopped
    2 gloves garlic, chopped
    2/3 cup asian sweet chili sauce
    1/4 cup dijon mustard
    2 T cider vinegar
    1 T chili powder
    1/2 t salt
    1/2 t pepper.


6 turkey thighs can be substituted for the chicken. Bone-in works just as well; bones are removed at the end of cooking. This recipe is just as good without shredding the meat.


Season thighs with salt and pepper. Using a whisk, mix all the remaining ingredients in the bottom of a crockpot and top with a layer of thighs.
Cover and cook at low for 6- 8 hours.
Transfer meat to a large bowl and, using two forks, shred the meat. If desired, thicken the remaining sauce with flour and pour over shredded chicken.
