Ingredients

PC Multi-Bran Cereal
Flour
Sugar
Baking soda
Frozen wild blueberries (thawed or unthawed works)
mashed ripe bananas
Large eggs
Safflower (or canola) oil
Directions
Preheat oven to 350 degrees farenheit
Spray a 9 X 5 inch loaf pan with cooking spray
In a large bowl, stir together flour, cereal, sugar and baking soda. Stir in blueberries.
In another bowl, whisk together banana, eggs, and oil. Stir banana mixture into flour mixture (do not over mix).
Spoon into perpared loaf pan.
Bake in the ventre of oven for 50-55 (my oven takes 65) minutes or until tester inserted in centre comes out clean.
Cool in pan for 10 minutes. Transfer to wire rack to cool completely.
