Ingredients

    1 cup all-purpose unbleached flour
    1 cup whole wheat pastry flour
    1/4 cup sugar
    1/4 cup Splenda or other sugar-free sweetener (granulated)
    1 1/8 tsp. baking soda
    1/2 tsp. salt
    2 egg whites
    2 tbsp. margarine, melted
    1 cup mashed banana (about 2 large, 3 medium)
    1 1/2 cup shredded zucchini
    1 tsp. vanilla extract
    1/3 cup chocolate chips

Directions

Mix the dry ingredients in a large bowl. Mix wet ingredients including zucchini in a smaller bowl, add to dry ingredients with chocolate chips and stir gently (fold) until just moistened. Pour into 12 muffin tins. Bake at 400 F for 15-20 minutes or until golden and toothpick inserted in center comes out clean.
