Ingredients

    1 lb sliced deli beef(thin)
    8 slices deli provolone cheese
    6 medium green peppers
    1 medium sweet onion(halved and sliced thin)
    1 lb sliced fresh mushrooms
    3 tbsp margarine
    3 tbsp olive oil
    1 tsp salt
    1/2 tsp ground black pepper

Directions

Preheat oven to 450F.Lay peppers on their side and slice off some of the side leaving a basket shape.Remove seeds and ribs and rinse. in a dutch oven heat oil and margarine. Add the onion and saute until soft and slightly browned.Add mushrooms and continue to saute until they are soft.Add the deli meat and continue to cook until beef shreds apart a little.Carefully divide this mixture into the six hollowed out peppers.Top with the provolone evenly divided.place in a aluminum pan and bake for twenty minutes or until cheese is melted and lightly browned
