Introduction

A lighter version of my childhood favorite. A lighter version of my childhood favorite.
Number of Servings: 20

Ingredients

    3 cups of flour (I used half white and half whole wheat)
    1/3 cup sugar
    4 tsp baking powder
    1/2 tsp salt
    1 tsp nutmeg
    2 cups peeled chopped apples
    1 cup unsweetened applesauce
    1/2 cup skim milk
    2 eggs
    3 Tbsp sugar
    1 tsp cinnamon
    2 Tbsp unsalted butter (melted)


Directions

preheat oven to 350.
mix dry ingredients (leave the cinnamon and 3 Tbsp sugar for topping). Mix milk and egg and applesauce. Combine dry & wet ingredients and fold in apples until just mixed.
Fill muffin tins and bake for 25 minutes.
Mix 3 Tbsp sugar and 1 tsp cinnamon. While muffins are still warm brush them with melted butter and sprinkle with cinnamon/sugar mixture.

Serving Size: makes ~ 20 muffins
