Number of Servings: 4

1 lb. Chicken Breast (boneless, skinless)
1 can (20 oz.) Pineapple Slices in 100% Juice (juice reserved)
    2 Tbsp. Low-Sodium Soy Sauce
2 Tbsp. Brown Sugar (lightly packed)
4 Hamburger Buns (100 calories per bun)
    1 Tbsp. Water
    2 Tsp. Corn Starch

You can add lettuce, tomato and cheese if desired (not included in nutrition information).

Butterfly chicken breasts and pound lightly to even thickness and place in a Ziploc bag.

In a small sauce pan, mix together 1/2 c. pineapple juice, soy sauce, and brown sugar and stir until sugar dissolves. Remove 1/4 c. and pour over chicken in bag. Seal the bag and place in the fridge for 15 minutes. Stir together the water and cornstarch until smooth and whisk into the remaining sauce. Place sauce over low heat and bring to a bowl, stirring frequently.

Pre-heat grill for 5 minutes on medium high heat. Place chicken on grill (discard marinade) and cook for 3 minutes per side (until cooked through).

While chicken is cooking, grill the pineapple slices and toast the buns on grill.

To assemble, place chicken on bottom half of the toasted bun, top with 1 Tbsp. of the thickened sauce, add 1 slice of pineapple and top bun.
