Introduction

Ingredients

2 lbs chicken breast or thighs cut into 1inch chunks
1 tbsp olive oil
1 white onion, chopped
6 cloves garlic (or 3 tbsp minced garlic)
3 tsp grated ginger root
4 tsp paprika
4 tsp garam masala
1 tbsp salt
1/4 cup tomato paste
2 28oz cans of crushed tomato (can use a combo of crushed and diced, but crushed is best)
1 can full fat unsweetened coconut milk
Tips
Serve with basmati rice and/or naan bread for the full experience!
Directions
Heat oil in a skillet. Add chopped onion, tomato paste, and seasonings. Heat until fragrant and mixed.
Put chicken in a slow cooker, and pour onion/spice mix over it. Mix together. Add the crushed tomato, and mix together.
Set slow cooker on high for 4 hours, or low for 7-8 hours.
In the last 15-20 minutes, add coconut milk and mix. Leave the lid off of the slow cooker for a thicker sauce.
Serving Size: Makes approx 15 1 1/2 cup servings
