Introduction

Ingredients

1 small carrot
1 small stalk of celery
2 tbsp chopped onion
1 large button mushroom
5 bell pepper strips
1/2 cup chopped Kale
1/4 cup Vegetable Broth
pinch each of dried oregano, basil, parsley, black pepper and red pepper flakes
1 small clove of garlic, minced
1 cup no salt added diced tomatoes
2 oz fat free ricotta cheese
Tips
The texture is similar to what it would be if you used heavy cream without all of the calories. Use whatever vegetables you have on hand.
Directions
Dice all vegetables small. In saucepan with a spritz of cooking spray saute the mushroom until brown. Add the rest of the vegetables, the dried herbs, red pepper flakes, black pepper to taste and garlic. Stir for a minute or two being careful not to burn the garlic. Add the vegetable broth, put a lit on it and simmer 4-5 minutes. Add the ricotta and stir until melted before adding the tomatoes. Heat through and serve.
