Introduction

Number of Servings: 3

Ingredients

    5 ripe tomatoes chopped
    1 bunch (about 1/2 c.) finely chopped
    2 cloves minced fresh garlic
    small can of sliced black olives
    1.5 Tbsp. Balsamic Vinegar
    1 Tbsp. Olive Oil
    Salt and Pepper to taste
    1/2 c. LF Feta Cheese
    6 oz. Mini Penne Pasta

Directions

mix first 7 ingredients together. Let sit at room temperature for 15-30 mins.

Cook Pasta according to box. Drain.

Mix pasta and tomato mixture together. Add Feta.

Mix and serve.

  • I'm thinking it is a bunch of basil, that's what I used. I really enjoy this recipe when the tomatoes are fresh from the farmers market. I skip the olives, too salty and interferes with that fresh basil flavor - 6/9/08
