Ingredients

Dough
1.5 tbs yeast
1.5 cups warm water
1 tsp honey
2 tsp olive oil
2-4 cups whole-wheat flour
.5 tsp salt
2 tbs wheat germ
1 tsp garlic powder
1 tbs cornmeal
Toppings
2-4 cups tomato sauce
2 chicken breasts, chopped into 1" slices or cubes
.25 lb mozzarella cheese, part skim, shredded
Directions
Dough
1. Mix yeast in warm water. Add oil and honey
2. Add 2 cups flour, salt, wheat germ, and garlic powder.
3. Mix about a minute, then add more flour 1/2 cup at a time until dough is smooth and elastic, not sticky.
4. Place in greased bowl and let rise about 1 hour.
5. Punch down to release gas, split in half.
Toppings
6. Brush pizza pan with olive oil and sprinkle with cornmeal. Press dough across pan and pierce with fork. Bake at 450° for about 5 minutes to harden crust. During this time, grill or pan-fry chicken for a few minutes. Does not have to be cooked through.
7. Spread each crust with tomato sauce, then cover with cheese.
8. For pizza, place chicken slices on cheese all around pizza. For calzone, place only on half of pizza; turn other half of dough over forming a pocket. Press edges with fork to seal.
9. Return pizzas to oven for 10-15 minutes. Cheese should be bubbling and crust should be crispy.
10. Cut each pie into 8 slices and enjoy!
