Ingredients

    2 boneless, skinless chicken breasts
    1 tbsp olive oil
    1/2 cup lemon juice
    1 tsp (or large dash) black pepper
    3 cloves garlic

Directions

Marinate the chicken breasts in all other ingredients for 12-24 hours, taking care to cover all sides of chicken breasts with marinade. Grill chicken on a George Foreman or traditional grill until cooked through (five minutes or more, depending on the thickness of the chicken breast).

One serving size is half a chicken breast. It is delicious served with spaghetti, or as leftovers in a flavorful sandwich.
