Introduction

A very delicious fall side dish. Can be used as an alternate for sweet potatoes at Thanksgiving or as dessert! A very delicious fall side dish. Can be used as an alternate for sweet potatoes at Thanksgiving or as dessert!

Ingredients

    Ingredients-
    2 lb. cooked carrots
    3 eggs
    3/4 c. sugar
    3 T. flour
    1 t. baking powder
    1 t. vanilla
    1 stick melted butter
    dash of cinnamon

    Topping ingredients-
    1/4 c. cornflake crumbs
    2 T. melted butter
    3 T. brown sugar
    1/4 c. chopped nuts
    cinnamon

Directions

Put cooked carrots in food processor (blender works fine in small batches), and mix. Add eggs, sugar, flour, baking powder, vanilla, melted butter and dash of cinnamon. Blend and pour into lightly greased 1 1/2 quart casserole dish. Mix topping and add on top. Bake at 350 for 45 minutes.

(The topping reminds me of carmel corn, but you can leave it off to save on calories.)

    I make a souffle much like this one except I do not add the topping, and add 1/2 t. nutmeg and reduce sugar to 1/2 c.
    My daughter in law loves it.
