Ingredients

30 jalapenos, cut in 1/2, seeded and deveined
1 Tbls Canola oil
1/4 cup minced Red Onion
1/4 cup mined Red Bell Pepper
3 Tbls minced garlic
2 pounds sweet Italian Sauasage, casing removed
2 cups mascarpone or cream cheese
1/4 cup grated Parmeasan, plus more for garnish
Salt and pepper
1 cup shredded mozzarella cheese
Minced chives
I used the 30 servings so it's easy to calculate the Portions
Directions
Preheat oven to 350 degrees F.
Place jalapenos on a sheet try and roast for 5-10 minutes until just tender. Remove from oven and cool.
heat the oil in a medium saute pan. Add onions, red peppers, garlic and sausage and cook for about 5 minutes, or until the sausage is just light brown. Remove and place in a large bowl. Cool to room temperature.
Add mascarpone and Parmesan to the sausage mixture and mix throroughly (I use my mixer). Season with salt and pepper.
Place approximately 1 tablespoor of mixture into each jalapeno half and top with 1/2 teaspoon of mozzarella cheese.
Please the sheet try of stuffer pepper in ovena dn back for 5-10- minutes or until the mozzarella cheese melts.
Garnich with Minced Chives and Parmesean.
