Ingredients

1 cup of jasmine or white rice uncooked
2 boneless, skinless chicken breasts (16 oz total) cubed
1/4 tsp salt
1 tbsp sesame oil
1 tsp vegetable oil
2 tbsp smooth peanut butter
1 1/2 tsp lite soy sauce
2 tbsp lime juice
1 cup low sodium chicken broth
1 tbsp corn starch
1 pkg frozen broccoli- thawed and drained
Directions
1. Cook rice according to pkg directions
2. Heat oil in a large skillet over medium heat for 2 minutes.
3. In a mixing bowl or small food processor, combine peanut butter, chicken broth, soy sauce, lime juice and the corn starch and blend.
4. Season the chicken with the salt and add to the pan.
5. Cook chicken 5 minutes or until completely cooked through and browned on all sides.
6. Add the broccoli to the pan and cook another 4-5 minutes.
7. Whisk the sauce one more time and pour over the chicken and broccoli. Allow to come to a boil and then stir for about a minute.
8. Allow the sauce to thicken. Turn down the temp and allow to simmer for about 5 -7 minutes.
9. Serve over rice.
Makes four 1 1/2 cup servings.
