Introduction
I was tired of using pricey ground meats for my soft tacos and burritos. This recipe evolved as a tasty vegetarian way to fill a tortilla. I was tired of using pricey ground meats for my soft tacos and burritos. This recipe evolved as a tasty vegetarian way to fill a tortilla.Number of Servings: 12
Ingredients

1 cup uncooked brown rice (makes 3 cups cooked)
2.25 cups water
1 block extra firm tofu, mashed or cut into small cubes
1 can tomatoes and chilies
1 package taco seasoning
1 can low-sodium kidney beans
Directions
Put uncooked rice, tofu, tomatoes and chilies, taco seasoning, and water into a medium or large size saucepan. Bring to a boil then cover and reduce heat to low. Simmer for 25 minutes or until the liquid is mostly absorbed. Take off the heat. Rinse and drain the beans before adding them to the cooked filling.
This works great served in tortillas with lettuce, tomato slices, salsa, and your choice of cheese.
