Number of Servings: 24

Ingredients

    Yeast - 2 Tbsp
    Hot Water - 0.5 cup (105 degrees)
    Rolled Oats - 1 cup
    Boiling Water - 1.5 cups
    Molasses - 0.5 cup
    Honey - 3 Tbsp
    Salt - 1.5 tsp
    Corn or Canola Oil - 0.5 cup
    Eggs - 2 large
    Spelt Flour - 4 cups
    Flax Seed Meal - 2 Tbsp

    Sprinkle yeast over .5 cup 105-degree water, set aside.

    Mix 1.5 cups boiling water, oats and molasses. When cooled to 110-degrees or so, add spelt flour, flax seed meal, salt, vegetable oil.

    Wisk eggs with yeast, add to dough and blend well. Dough should be sticky.

    Cover bowl of dough, refrigerate for 2 hours or overnight.

Directions



Take chilled dough out of refrigerator, punch it down. Divide it into two, lightly-greased bread pans. Sprinkle oats on top for decoration, if desired. Let rise (about 30 minutes).


Bake in preheated oven at 350-degrees for 40-45 minutes. Let cool before slicing.

Makes 2 loaves of 12 slices each.
