Introduction

healthy, low-fat chocolate-chocolate muffins with a hint of orange! healthy, low-fat chocolate-chocolate muffins with a hint of orange!
Number of Servings: 12

Ingredients

    2 egg whites
    1/2 cup orange juice
    1/4 cup bananas
    1 cup whole wheat flour
    1/2 cup quick-cooking oats
    1/2 cup cocoa
    1/2 cup honey
    2 t baking powder
    1/2 t salt
    1/2 t orange extract (or vanilla)
    1 t orange zest
    1/4 cup cold coffee

Directions

Mix dry ingredients. Mix wet ingredients except egg whites. Combine. Beat egg whites until stiff and gently fold in. Do not over-mix!! Bake at 400 degrees for approx. 15 minutes. Makes 12.

    These were good. I roughly chopped half a Green & Blacks Maya Gold choc. bar and added it to the mix before baking, and then made a light orange glaze to pour over the top of the cooled muffins. Had I not added at least one of those customizations, they would have been a bit too bland for my taste. - 9/15/07

    made these into mini muffins ( 39) with dark chocolate chips on top ( 3 )...it meant we could all have a taste without feeling guilty....very yummy - 8/21/07
