Ingredients

10 chicken thighs, skin and fat removed
1 small red pepper, diced
1/2 large onion, diced
2 cloves garlic, chopped, not minced
4 tbsp. bbq sauce (I like bulls eye)
1 tbsp. extra virgin olive oil
1/2 cup white wine
dash or two of hot sauce
2 tbsp. white wine
Directions
Heat 1 tbsp. olive oil in non stick skillet. Saute onions, red peppers, and garlic until softened. Using a slotted spoon remove vegetables.
Salt and pepper skinless thighs. Brown on both sides in same pan as vegetables. Remove and blot with paper towel to remove excess oil.
Deglaze pan with 2 tbsp. white wine. Cook down until wine is almost evaporated. Remove from heat, add chicken and vegetables. Combine BBQ sauce with 1/2 cup white wine and a few dashes of hot sauce. Pour over chicken and vegetables.
Cover and bake for 30 to 45 minutes at 350 degrees or until juices run clear and chicken is tender.
I like to bake a rice pilaf at the same time, so dinner is almost done. Just add a vegetable and you are set.
