Introduction

Ingredients

-3 eggs
-1 tbsp sugar
-1 tsp salt
-500 ml (~2 cups) skim milk
2 cups flour
Directions
Makes 20-25 bliny.
-In mixing bowl, whisk 3 eggs.
-Add milk, sugar, and salt, and whisk.
-Add flour, mix until no lumps remain.
Batter should be liquid and pour easily, so that when you pour it in the pan, you can swish the pan around and the batter spreads and covers the pan. If necessary, add a little milk or flour to get the right consistency
Place a small fry pan on the stove with medium high flame. Let the pan heat. When hot, grease the pan (spray Pam works best). Lift the pan off the stove and spoon in some of the bliny batter (depending on the size of the pan, 1/8 cup to 1/4 cup of batter should cover the pan). Turn the pan in a circular motion, so that the batter covers the pan.
Cook the blin on the first side until the batter turns yellow (20-30 seconds). Turn over and let cook another 30-60 seconds.
*Note: If you have a good nonstick pan, you do not need to regrease the pan. Since the pan is hot when you add the batter, it cooks quickly and does not stick.
