    1 tbs oil
    1 large shallot
    1 tbs minced garlic
    1 tsp garlic powder
    1 can diced tomatoes
    1 cup sliced mushrooms
    2 tbs parsley
    10 chicken meatballs
    2 servings dried pasta (this happens to be 1 1/3 cups for the pasta I used)


Heat oil in skillet, add chopped shallot and garlic. Let brown for a few minutes. Add mushrooms and let cook down about half way. Meanwhile, boil water for pasta. When mushrooms are cooked down, add 1 can of diced tomatoes. Do not drain can. Add chicken meatballs to the tomato mix, cover and heat over med-medium-high heat for 11 minutes. Boil pasta for recommended amount of time (in this case, 11 minutes).

Drain pasta when finished. Add butter and pasta to tomato mixture and stir until butter is melted. Divide evenly and serve.
