2 Cups Water
4 Tbs Butter
2 Cups Flour
3 Eggs
Salt as needed
Directions
Makes 5 large servings
Boil water and butter.
Turn off Heat, but do not remove from heat.
Add flour at once and beat well until paste is formed in pan.
Add eggs one at a time, beating well in between eggs.
Add salt, cheese, or sugar if desired.
Butter a oven-safe dish (pie tin works well).
Scoop large balls (should make 5) or small balls into the pan, they can touch.
Cook at 200 Celsius for 45 minutes, reduce heat to 160 Celsius for 15 minutes.
Serve warm - they will deflate if served cold.
Goes well with tomato sauce if for dinner, or chocolate sauce if for dessert.
