Introduction

This is my light version of Olive Garden's Zuppa Tuscana or an Italian Peasant Soup. I've used turkey broth just because it's what I had on hand, but next time, I'll use chicken broth. Ingredients

    5 c. homemade, fat-skimmed chicken or turkey broth
    3 c. potato slices
    1 can drained, rinsed pinto or catalina beans
    bag of Schwans meatballs, defrosted
    4 c. fresh, cleaned spinach
    Ground red pepper, salt and black pepper to taste

    Bring broth to a simmer, add the potatoes and cook for 10 minutes until tender. Add the meatballs & beans, cook for 5 more minutes. Lastly, add the spinach which will wilt quickly. Stir entire pot so that the beans don't burn on the bottom. Add red pepper, salt and freshly ground black pepper to taste.

Directions

Makes 12 servings.

Add grated parmesan at serving if you like. (not included in the calories) This is a filling, hearty soup.

I make homemade broth with onions, carrots, celery, parsley with the bones/meat. Cool to remove the fat. You can freeze this in freezer bags or keep in the refrigerator for a week so you have a quick meal.
