1.5 cups whole wheat flour
2.5 tbsp baking powder
3 tbsp I Can't Believe It's Not Butter for Cooking & Baking
.25 cup Light Silk Plain Soy Milk
1 cup mashed sweet potato
1 tsp garlic powder
1 tsp nutmeg
.5 tsp salt
.5 tsp pepper
Directions
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Sift the dry ingredients together in a large bowl. Add the butter and mix manually until the mixture resembles bread crumbs.
Blend the soy milk and the mashed sweet potato until it makes a creamy puree. Add the sweet potato mixture to the dry ingredients and combine by hand.
Put dough on a lightly floured surface and kneed about 50 times. Split dough into 4 sections and roll each into a very thin sheet. Cut into squares, triangles, or rounds. Repeat with all 4 sections of dough.
Place on the parchment paper lined cookie sheet. Bake at 350 degrees F for 10 minutes, flip the crackers, and bake for another 4 minutes. Cool on a wire rack,
