Ingredients

    Eggplant, fresh, 1 eggplant, peeled
    Zucchini, 2 cup, sliced
    *Peppers, sweet, red, fresh, .5 cup, chopped
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 3 cloves
    Olive Oil, 2 tbsp
    Beans, black, 1.75 cup
    Canned Tomatoes, 1 can
    Chili powder, 1 tbsp
    *Chili pepper, red, dried, 6 grams = 2 tsp., 1 tsp

Directions

Sautee eggplant, zucchini, red pepper, onion & garlic untl almost tender. Rinse & drain black beans, add to mixture. Add tomatoes. Bring to a simmer for 20 minutes. Add seasonings. Salt & pepper to taste.
