Introduction

Taken directly from Women's Health, May 2010 issue, page 44. This recipe comes straight from Jillian's MASTER YOUR METABOLISM COOKBOOK. The only thing I added was 1 Tbsp of cinnamon because I LOVE that flavour!

Jillian suggests a 2 Tbsp serving atop 1/2 cup nonfat plain Greek yogurt with berries and finished with a honey drizzle.

Ingredients

    1 cup quinoa (uncooked, rinsed well and drained)
    1/4 cup whole flaxseed
    1 Tbsp honey
    1 Tbsp olive oil
    1 Tbsp cinnamon

Directions

1. Mix all ingredients together.
2. Spread on a baking sheet and bake at 375 deg. F oven until lightly browned. (You might stir every 10 minutes for about 25 - 30 minutes.)
3. Let cool, crumble.

MAKES EIGHT 2 Tbsp SERVINGS.

Suggested serving: add 2 Tbsp of topping to 1/2 cup nonfat Greek yogurt, along with fresh berries. Drizzle honey on top.

    Fanfrickintastic. This is one of my new favorite breakfasts. The only thing I changed is adding a dash of pumpkin pie spice on top (next time I'll probably add it in the quinoa crunch before I bake it). The cinnamony flavor really makes it pop! - 5/16/11

    Incredible!
    This is sooo incredibly yummy! The quinoa burned when I followed the baking instructions, so I lowered the heat to 350 degrees and baked only 18 minutes. - 6/12/10

    Very Good
    I have this one too, it is yummy and very crunchy. However, I found it only made 6 servings when I made it. So that upped the calories a bit. I will try the cinnamon next time! - 6/2/10
