Introduction
This is a tasty way to start your day, especially if you don't have time to sit and eat. This is a tasty way to start your day, especially if you don't have time to sit and eat.Number of Servings: 3
Ingredients

6 Eggs, beaten
salt and pepper to taste
2 slices cooked and crumbled bacon
1 oz. shreded part skim mozzarella
Nonstick spray oil
Directions
Preheat oven to 375. In a large bowl, beat 6 whole eggs. Add salt and pepper to taste.
I usually cook a bunch of bacon ahead, if you don't have any on hand, you can microwave the two peices for a few minutes to crisp. Crumble them in to small peices.
You will need a muffin tin that has 12 cups or two with 6. Spray the muffin tin with nonstick spray (I prefer silicone - it releases easier).
Add about 1T of the eggs in to each cup. Then sprinkle a little of the bacon mixture in to each (be sure to add a tiny bit at a time so you have enough for each muffin). Then add remaining egg mixture to the cups, it should be about 1T each. Lastly, sprinkle with a little of the mozzarella.
Bake for about 15 minutes, or until a toothpick comes out clean.
A serving is 4 muffins.
These are a great snack or quick breakfast when you're running out the door.
They reheat well in the microwave and only take about 30 seconds.
For variations, I like to add come cooked hashbrowns or sauted mushrooms and spinach with Mozzarella.
