Ingredients

2 1/4 cups flour
2 tbsp sugar
1 tsp salt
1 package (or .25 oz or 2 1/4 tsp) yeast
1 cup very warm water
2 tbsp Earth Balance shortening/ butter spread
1/4 silken tofu, purreed to egg-like consistency
Directions
Mix 1 1/4 cups of flour, sugar, salt and yeast in a large bowl. Add the water, Earth Balance and tofu; beat with spoon until smooth. Stir in the remaining flour until smooth. Scrape the batter from the side of the bowl; Cover and let rise in a warm place about 30 minutes or until doubled in size.
Grease a muffin pan (I spray with cooking oil). Stir down the batter by beating about 25 strokes with your spoon, then spoon the batter into the muffin cups. Let the batter rise again for another 20 to 30 minutes or until it rises over the tops of the cups.
Heat your oven to 400 degrees F. Bake 15 to 20 minutes or until golden brown.
