2 1/4 cups flour
2 tbsp sugar
1 tsp salt
1 package (or .25 oz or 2 1/4 tsp) yeast
1 cup very warm water
2 tbsp Earth Balance shortening/ butter spread
1/4 silken tofu, purreed to egg-like consistency
Grease a muffin pan (I spray with cooking oil). Stir down the batter by beating about 25 strokes with your spoon, then spoon the batter into the muffin cups. Let the batter rise again for another 20 to 30 minutes or until it rises over the tops of the cups.
Heat your oven to 400 degrees F. Bake 15 to 20 minutes or until golden brown.
